Baked Sweet Potato Chips!

Who doesn't LOVE sweet potato chip/fries??
Oh they are so addictive!

But friends, we cannot keep eating those delicious fried kind...
BUT here's an alternative that you don't have to feel bad AT ALL eating a whole tray full! you can spice it however your heart desire. I did mine at first with salt, pepper and curry powder. Later, I got lazy and just seasoned with salt. They are SUPER crispy and it's done in about 10 min!

I have a mandolin. But not those big ones you see on cooking shows. I have these. They come in handy more than you think, in my kitchen anyway. I have un-adjustable kind, so my chips come out VERY thin: Especially after it's baked. I imagine if the mandolin allowed for a tiny bit thicker slices, the chips will be more sturdy for heavy dips. But I make these to eat just as is, so I've no problem with think and crispy chips!

1. slice them
2. toss in a very big bowl with about 1 tbs of oil and whatever seasoning you want.

3. Arrange them on a non stick baking sheet, so they are not over lapping.
4. Bake at 320 for about 10-15 min. I would flip them after 6-7 min.

When they are not limp any more, they are done! actually, even if they seem a little moist, if the edges are browning, most likely it will firm up even after you take them out of the oven.
